Dairy Free Pumpkin Banana Bites

Another fall recipe to fuel your pumpkin spice cravings! These pumpkin banana bites are the perfect dairy free and healthy snack for tiny hands on the go.

With about half a can of pumpkin puree left over after our pumpkin pancakes, and never one to waste a good can of pumpkin, I put it to use with another fun dairy free treat. There aren't many quick things we can grab to snack on that are dairy free, but these are perfect for that quick treat you need, easy to pack to bring on the go, and not too messy (at least not for more seasoned eaters). They have a fun texture too, for everyone doing baby led weaning to try out.


Dairy Free Pumpkin Banana Bites

Prep Time: 5 minutes, Bake Time: 20 minutes, Total Time: About 25 minutes

Ingredients:

  • 1/2 cup pumpkin puree

  • 1 banana

  • 1 cup rolled oats

  • 1 tablespoon extra virgin olive oil

  • 1 teaspoon baking powder

  • 1 teaspoon vanilla

  • 1/2 teaspoon pumpkin spice

  • 1 egg yolk

Instructions:

  1. Preheat the oven to 350 degrees and grease 2 baking sheets.

  2. Combine all ingredients in a large bowl. Mash the banana and mix everything together until smooth.

  3. Use your teaspoon to scoop tiny bite sites pieces onto the baking sheet. No need to space them apart as they do not spread.

  4. Bake in the oven for about 10 minutes, or until edges just barely begin to darken.

  5. Let them cool and enjoy!
