I was never a huge fan of pesto, but the basil in our garden got a little wild this year and I was looking for any recipe to try to use it up in large amounts, and I must say, after trying this recipe pesto is now one of my favorite go to additions to a lot of recipes. It tastes great plain or as a dip on crackers and veggies. It is a wonderful addition to any party charcuterie board, and I guarantee at least one person will ask you for the recipe it'll be such a hit. It can be also be used as a topping for almost any meat, and tastes espeically great brushed over salmon or chicken, then cooked in the oven. Baby Friendly Pesto Recipe
Total Time: 20 minutes
Ingredients:
2 cups fresh basil
1 cup shredded parmesean cheese (dairy free or regular)
4 cloves garlic
1/2 cup pinenuts
1/4 tsp black pepper
1/4 cup lemon juice
1/2 cup extra virgin olive oil
Instructions:
Wash and dry your basil.
Place basil in a blender. Add all other ingredients.
Blend until smooth.
If needed, add additional cheese, pepper, olive oil, etc until desired taste and consitency are met.
