It's New Years Eve, and I wanted to end this amazing year on a good note and with our first recipe on the blog, so I woke up a little early and quick threw together a breakfast casserole!
My husband woke up surprised and of course ready to devour whatever the delicious smell was coming from the oven! Here is my recipe for an easy and healthier Cheddar Bacon Breakfast Casserole.
Cheddar Bacon Breakfast Casserole
Prep Time: 25 minutes
Cook Time: 1 hour & 5 minutes
Cool Time: 10 minutes
Ingredients:
1 32 oz bag frozen hash browns or breakfast potatoes, thawed
9 large eggs
1/2 cup low fat or fat free milk
1/2 tsp. pepper
1/2 tsp. garlic powder
1/2 tsp. onion powder
1 8 oz bag reduced fat shredded cheddar cheese
1/2 lb uncured bacon, pre cooked nice and crispy, and crumbled
1 small/ medium onion, chopped
1/2 a bell pepper, chopped (a red bell pepper add a nice color, but whatever you have works)
3-4 green onions, chopped
Directions:
The night before I cook my bacon, dab off the grease, and crumble it up into small pieces. Uncured, low sodium, center cut bacon is your healthiest option! I also finely dice my onion, 1/2 a bell pepper, and a few green onions to save me prep time in the morning. Don't forget to thaw your potatoes out as well.
When you are ready to make your meal, pre heat the oven to 350 degrees. I lightly grease a 9 x 13 casserole dish. Dump your potatoes into your casserole dish and spread evenly.
In a bowl whisk together your eggs, milk, pepper, garlic powder, and onion powder. Then pour the mixture over the potatoes.
Sprinkle half of your cheese on top.
Sprinkle your bacon, onions, and peppers on top of this.
Sprinkle the remaining cheese on top.
Cover with tin foil and cook for 1 hour. Remove the foil and cook another 5ish minutes. Then let set to cool, and sprinkle with green onions to garnish.
Tips & Tricks:
Pre cut your veggies the night before, while your bacon is cooking, to save time the next day. You can also make the whole dish the day before and cover it in the refrigerator to pop right into the oven in the morning. Also add in any veggies of your choosing. My husband loves mushrooms, so sometimes I add mushrooms to half of the casserole to provide options.
When using bacon, uncured, low sodium, center cut bacon is your healthiest option. You can also substitute the bacon in for turkey, ham, or sausage, or do a mix of a few.
Feel free to add any other herbs and spices you and your family enjoy!
It tastes great with a side of whole wheat toast or homemade applesauce.
If you don't finish it, you can store it in the refrigerator for a few days and reheat it. It also freezes well, so you can freeze your leftovers for a later time. (That is if you have any!) Just make sure it's fully cooled, then cover it with a layer of plastic wrap and tin foil.
