These are delicious! (one hungry breakfast guest shared)

Every year we spend the day at my parents for our family's traditional Ukrainian Christmas celebration. The day is always filled with games, gifts, and of course what feels like a million delicious things to eat. We all take turns finding interesting games or trialing new recipes that everyone will enjoy to spice things up, so this year I wanted a fun breakfast treat. Having recently purchased a can of Pillsbury Cinnamon Rolls, and maybe having a bit of a pregnancy craving for them, I decided to check out their website, as most websites have all kinds of recipes for their products and I came across this recipe for Christmas Tree Cinnamon Rolls.

These were just what I needed, well almost. I've been trying hard to be healthier for myself and the baby as you know, but my family too has joined in (my husband not so much by choice haha), so I needed to think of a way to add a little nutritional value and make them a bit healthier.

I started by of course buying the reduced fat cinnamon rolls. These are 20 less calories than the originals, 2% less fattening, and have 1% less added sugar. Nothing drastic but it was a start. I also decided to use the icing from the can, instead of adding all the additional cream cheese and sugar the recipe called for. And most importantly I decided to cut the candy add ons, and instead switched them out for some dried fruit, which I'd like to add tasted delicious! Check out the new health savvy recipe below. Or checkout another holiday breakfast favorite, Cheddar Bacon Breakfast Casserole, which you can find the recipe for on our blog.

Ingredients:

  • 1 can, Pillsbury Reduced Fat Cinnamon Rolls (with icing)- comes with 8 rolls

  • 1 drop of green food coloring

  • green sprinkles

  • 2 tablespoons dried apricots (cut into small pieces)

  • 2 tablespoons dried cranberries

  • tooth picks

Instructions:

  1. Preheat oven to 375°F and grease one baking sheet.

  2. Open your cinnamon rolls, pulling off one roll at a time, and unrolling it as you do. Shape them into evergreen trees, adding a stump at the end, and insert a toothpick to help them hold their shape. Place spread apart on baking sheet.

  3. Place them in the oven and cook for 10-12 minutes, flipping half way through if you'd like for an even bake.

  4. Meanwhile heat your icing for 20 seconds in the microwave, add one drop green food coloring, then mix.

  5. Remove baking sheet from the oven and let trees cool. Cover with a thin layer of icing, add a few green sprinkles, then top with small bits of your dried fruit of choice.

  6. Don't forget to remove the toothpicks before you serve them!
