Even if you are a dairy lover, these cookies will have everyone at your holiday party naming you baker of the year. Instead of your typical gingerbread shaped cutout cookies, this variation is much quicker to make for all those parents cooking with babies and kids, and has a soft and chewy taste that even your typical gingerbread haters will love.
This year our annual family holiday cookie baking weekend looked a little different with not one, but two babies around a year old there to "help". So, as we started planning instead of doing our same typical collection of everyones favorite cookies, we went out on a limb and decided to trial a few new recipes that were a bit less time consuming. This was also our first year doing a full dairy free cookie baking session, and we weren't sure how it would go, but I am blessed to have a family that continues to support me through this dairy free journey we are currently on. This recipe was one of the few new ones, and not only was it a breeze to make, but it was such a hit I got texts saying the taste and texture of these cookies was actually prefered over the traditional gingerbread cookies we normally make. And although they are dairy free, you'd never know there's anything different about them.
Dairy Free Gingerbread Cookies
Prep Time: 20 minutes
Cook Time: 10 minutes
Total Time: 30 minutes
Ingredients:
3 cups flour
2 tsp ground ginger
1 tsp ground cinnamon
1 tsp baking soda
1/2 tsp nutmeg
1/2 tsp pumpkin pie spice
3/4 cup dairy free butter
3/4 cup sugar & a separate 1/2 cup
2 tbsp brown sugar
1/2 cup molasses
1 egg
1 tsp vanilla extract
Instructions:
In a bowl whisk together the flour, ginger, cinnamon, baking soda, nutmeg, pumpkin pie spice then set it aside.
In another bowl add your butter, sugar, and brown sugar and beat together.
Next, add in your molasses, beating until well combined. Last, add your edd and vanilla. Beat all ingredients a few minutes until well combined.
Roll dough into a ball, and wrap in plastic wrap. Refrigerate for a minimum of an hour.
Once dough is ready, preheat your often to 350.
Using a small spoon or cookie scoop, make small balls, roll the balls in the sugar coating them all the way around, then place about an inch apart on a baking stone or cooking sheet.
Bake cookies for 7-10 minutes depending on your oven. 9 minutes seemed to be the sweet spot for us. Once done remove them from the oven and let them sit to cool on the baking sheet.
