Fruity Granola Nut Cookie Balls

Some days, the to-do list is long, the kids are hungry right now, and turning on the oven feels like one more task you definitely didn’t sign up for. That’s exactly why I love these No-Bake Fruity Nut Cookies. They come together in minutes, use simple pantry staples, and give you that perfect mix of chewy, crunchy, and naturally sweet.

Whether you need a quick after-school snack, a lunchbox treat, or a little something to satisfy your own sweet tooth during the afternoon chaos, these cookies are a lifesaver. They’re the kind of throw-together, zero-stress treat that makes you feel like you’re winning at this whole mom-life thing. They’re packed with good-for-you nuts, naturally sweet pops of fruit, and the best part? They come together in minutes. No baking, no fuss, and no dishes piling up. Just mix, shape, chill, done.
Fruity Granola Nut Cookie Balls
Prep Time: 10 minutes, Cook Time: 0 minutes, Total Time: About 10 minutes

Ingredients:
1 1/2 cups granola
1 cup dried apricots (can soak a few minutes to plump)
1/2 cup prunes
1/8 cup nut butter (We use peanut butter or cashew butter)
1 few drops of honey (or agave for under 1 year old)
Instructions:
Set Up : Measure out all ingredients and prepare a blender.
Blend All: Pour all ingredients into the blender and blend until everything is well chopped. About 30 seconds to a minute.
Scoop & Roll: Scoop out the mix, and roll into about 1/2 oz balls, or a bit larger based on preference. Then place on a plate or air tight container.
Refrigerate: Place in the refrigerator to harden a bit, or serve immediately. These stay fresh in the refrigerator in an air tight container for 2 weeks!
TIP: You can use other varieties of dried fruits: cherries, pineapples, apples, bananas, mangos, etc.
TIP: These are a staple in our house, so we change them up by using different but butters, fruits, and flavors of granola.
TIP: These can get a bit messy and crummy, so when serving toddlers serve in a nice suction bowl that won't spill (WE LOVE THESE FROM AMAZON) or grab a silicone placemat (WE LOVE THESE FROM AMAZON), which wipes up easily or can be carried, crumbs and all right to the trash or sink.
